Oat pancakes:

• Mix all the ingredients except oil and allow them to rest. Adjust the quantity of milk to get a pancake-like batter. Make small pancakes with a drizzle of oil and keep the pancakes aside.

Paneer bhurji:

• To prepare the bhurji, heat oil, add chopped onion, salt to taste. Once slightly cooked add ginger garlic paste, sauté to the onions for 1-2 minutes. Add turmeric powder, chat masala and red chilli powder. Then, add a bit of water, grated paneer and mix well. Be careful not to overcook.

Avacado chutney:

• Put all ingredients except avocado in a food processor. Pulse once, then add chopped avocado, lemon juice and pulse again.

Assemble pancakes alternating with avocado, chutney, paneer bhurji to create your oat pancake sandwich(es).
